My daughter is planning a Mexican themed party complete with a Margarita machine, and decorations. She is planning on serving Taco Salad, soft and hard tacos, and of course nacho chips and dips. We even have a 7 bean dip!
Does anyone know of any other recipes that we can make for the party that would fit in the theme and not be too complicated to make?

If you shop Costco, check the cold and frozen sections. They sell cold chili relleno's and chili's verde that are very good. Have fun.

Black bean and corn salsa

1 can black beans, rinsed and drained
1 can sweet corn, rinsed and drained
1/4 - 1/2 cup chopped red onion (chop to about the size of the beans)
1/2 red bell pepper, seeded and diced (same size as the rest of the stuff)
1 medium size sweet apple, diced (same size again)
2-4 cloves finely chopped garlic
1-2 TAB chopped fresh cilantro

Combine the above ingredients in a large bowl. Drizzle with about 4 tablespoons of olive oil and 1 tablespoon lime juice. Add salt and pepper to taste.

This gets better after it sits for a while and is best served at room temp (but store it in the fridge) You may need to add more olive oil to taste, you just want the stuff to be lightly coated.

Serve with tortilla chips for scooping.

I like this one because it's easy to make in the RV, doesn't involve any cooking and is relatively healthy.

We've make grilled quesadillas for parties before. Use the largest flour tortillas you can find. Spread with mexican cheese if you can find it, if not you can use monterey jack. Fold the tortilla in 1/2, brush with a little oil, and grill on both side. Then cut up in smaller size pieces.

We like to add roasted poblano peppers to them. You can use your imagination and use other fillings.

Refried beans, beer, cheese, salsa and chopped onion. Use a microwave dish.
Mix beer in with beans ( looking for consistency of peanutbutter) mix in some shredded cheddar cheese, salsa and some chopped onion. Microwave on high stirring once or twice. When starting to bubble place more chopped onion , and cheese on top then micro again untill cheese is melted. Serve with nacho chips.
Sorry, I never use exact measurments you can adjust to your own taste. The salsa dictates how spicy it will be. Make sure to cover, it will make a mess of your micro oven.
Makes a great appetizer!

there's a recipe here for Corona Cocktails. (shrimp in buffalo sauce jammed in a beer bottle.) It's awesome. Do a search. MRs. Geo's Corona Cocktail, I think it's called.

How about this for dessert?

Cinnamon Tortillas Chips with Strawberry Salsa
-courtesy Canadian Living Magazine

4 Flour tortillas
2 tb Butter, melted
2 tb Granulated sugar
1/2 tsp Cinnamon

STRAWBERRY SALSA:
2 c Strawberries, chopped
1 tb Chopped fresh mint
1/2 tsp Grated lime rind
1 tb Lime juice
1 1/2 tsp Liquid honey


Combine strawberries, mint, lime rind and juice and honey; cover and refrigerate for 1 hour.

Brush both sides of each tortilla with butter. Combine sugar and cinnamon; sprinkle over each side of tortilla. Bake on lightly greased baking sheet in 375F oven for about 10 minutes or until crisp and golden. Cut into quarters. Serve with salsa. Makes 4 servings.

There's also a recipe here somewhere for Flan cake. BAkes up with a layer of custard-y flan on top and caramel on top of that. Give it a try, it's excellent.

Jalapeno Poppers

Cut jalapenos in half lengthwise, remove seeds and ribs; stuff with cream cheese; wrap with a small slice of bacon; bake until bacon is cooked (approximately 20 minutes at 375 - 400 degrees). YUM!
