We also stayed at Bakersfield RV Resort, although it is on highway 99 you can go up 99 from the south and then cut over to highway 5 without much loss of miles. There is also a Costco with gas very near that opens early. If you are going soon you will need hook-ups for the air conditioner.
Though I think you are looking for a place to park, not an RV park, I have stayed here Sommerville Almond Tree RV park once, and will do so the next time I need to as well. Nice quiet park, lots of trees, easy on-off the I5. This is near Coalinga.

Going up the 5, Buena Vista County Recreation park, in Taft, is a great campground about 10 min off the freeway. It is adjacent to a waterski lake. Really large campsites, very hot, at often full in the summer. They have a huge overflow area, no hookups, but restrooms, accessible water and a dump station.

Have stayed overnight at Santa Nella RV resort.Easy access from I-5, but did not hear highway traffic. The park was clean, well managed and has propane. Happy trails.
You don't really say if you're looking for free parking or an RV park. This time of the year would be BRUTAL to stay anywhere without electricity on I-5 or Hwy 99.
I also like Hwy 99 better. They've repaved it in past few years and it's more leisurely. There is a short connector freeway on the 99 that puts you back on I-5 in Stockton.
