I considered buying a Winnebago Rialta because of VW engine/chassis (lots of
VW mechanics in Mexico) until I discovered that ground clearance was pretty low
after Winnebago got through with it (and it can't be lifted like a Eurovan can).

I might consider a used Sprinter model with turbo diesel as expensive as they are.
How's the clearance on them? I think 8" or more would be ok.

Any other model you can recommend?

The clearance on the 06 and earlier models of the Sprinter was around 8.5". I don't know about current models but would guess it to be about the same. However, if the converters add running boards (a la Roadtrek) the clearance would be much less.

Our Sprinter was converted by Sportsmobile and has no running boards. The propane tank and gray water tank are slung under the van but are still higher than than the lowest part of the van body. Sportsmobile also does conversions on Ford and Chevy vans if that is what you prefer. They also make 4X4 van conversions for offroaders that would have much better ground clearance but these are very pricey.

There are lots of 4x4 Sportsmobiles made in California.

My Pleasure Way Traverse has just under 8.5". I suppose a guy could lift one a bit and put some larger tires on it to gain another inch or so of clearance. Otherwise, like burlmart points out, you'd want to go to a Sportsmobile or do a 4x4 conversion. I've considered it on my van but I'm not handy and it would cost me $8-12k to do. Just too spendy for me.
