Seven gal. Aqua-Tainers. We have 6 at the moment and take as few or as many as we feel are required.

My list would be similar to Mikes

I would go with four golf cart batteries
Honda Generator 2000 watts
Three or four 7 gallon blue jugs
Solar 100-200 watts.

These are the essential items for boondocking. After that you need tools, I also like a shovel, rake, and 5 gallon pail. Then the extras A GE Super Radio, Sangean pocket/weather radio, satellite dish and the rest of entertainment stuff.

Here's what I take for additional fresh water. It's a 50 gallon PCO water tank. I also have a 12v portable water pump I use with it:

A stove-top expresso maker and a full wine cellar are simply ESSENTIAL.

Other than that we have 600W of solar, LED lights, internet (amp/antenna), extra water container and paper plates.

A handy extra is the Water Thief -> allows you to fill-up water just about anywhere.

We boondock a lot and we never leave home without our Battery Buddy. We've had to jump start our drained batteries on the truck or toy hauler several times. Really helpful when you are in the middle of nowhere.

Just be sure to charge it before you leave.

I would not consider a 100w solar panel essential. It is not going to put out enough to eliminate the need for the generator so what is the purpose? It would be fine for storage where you have no access to shore power but it is not going to eliminate the generator so why bother.
