We have been considering replacing our sink faucet which has two handles with the single handle version. I see there is one in Camping World's catalog. Anyone done this and have suggested models?

Just go to Home Depot or Lowe's and get a good Delta or Moen, it just takes a standard kitchen faucet, nothing special.

Well not really a kitchen faucet. The vast majority of popup faucets use a 4 inch center to center distance for the down piping. Check before you purchase and save a trip back to the store.
Another thing we've encountered is with fold over sink cabinets is the height of the faucet. Check with the sink flipped on how high the facuet can be.
And most faucets sold as replacements in RV centers are like the original...all Plastic. Figure just a few years before it goes bad.

Excellent idea of going to a big box store like Home Depot, Menard's, Lowe's, etc., and getting a "regular" household type faucet... You'll more than likely get a lot more faucet for a lot less money and for sure you'll get a higher quality faucet than the RV junk regardless of money spent!!

I tried to purchase on at a big box store. Couldn't do it. My pup faucet is on 4" centers, the kitchen faucet is bigger. Best I could do is use a bathroom sink faucet and then it didn't have a spout that would work in my sink. It would have been nice, but...

I replaced the sink faucet in my Starcraft. It was getting ugly and also had a small spout that hardly anything would fit under. I found one that mounts exactly the same with a longer/taller spout on E-bay. Had plenty of room for the larger fixture when the sink was flipped over.

This will be a great improvement. My problem was finding a faucet that was short enough to fit under the bunks as they slid in when we folded things down. 4 inch centers is the usual but then you need to carefully look at width, height and how far away the spout dumps the water. In my Starcraft HTT, the water barely cleared the counter top.
I changed out all of my faucets in all of my trailers to single handle faucets. When boondocking, they save a lot of water. With two you have to regulate the water temperature each time, using both hands. With the single handle, one hand quickly turns the water on and off without all of the fiddling around to get the correct temperature. The water saved by shaving alone can justify the new faucets.

You may be able to find a cheap one on ebay.
4 whopping cylinders on Toyota RV's. Talk about great getting good MPG. Also I have a very light foot on the pedal. I followed some MPG advice on Livingpress.com and I now get 22 MPG! Not bad for a home on wheels.

I'll add to the chorus that says check the big box stores. I replaced my cheap plastic RV faucet with a brass one from Home Depot. I bought the store brand (Glacier Bay) and it works fine. My faucet was on 8-inch centers. If yours is on 4-inch centers, you can still probably find a bar faucet that would work well for you. You'll save money and it will be a better faucet than you can probably get from and RV parts store. You won't know until you look.

I replaced mine with a Moen laundry faucet from Lowes. It's a big improvement over the cheap stock plastic faucet. I have a swing down type galley and the new faucet spout must be removed to clear the bunk when it's slid in. The spout unscrews easily by hand and is a small price to pay for the added convenience of the increase in spout to sink clearance and the ability to swivel.
