You're missing the point. It will take me an entire day to mix up dough, let it rise, encapsulate the filling in a bun, let it rise again, then bake; to make the kind of breakfast buns I have in mind. Yes, I could scramble the eggs each morning, then do the buns. Might get on the road by 8 PM that night.

Yes I could do something simpler. Could just eat peanut butter and crackers three times a day like in college. Just trying to have fun now.

they freeze fine. cook them with a little onion and chopped bacon or ham or sausage and then wrap them in a burrito and freeze the whole thing.

I do his also. I will make 20 or so, freeze them, and they are a healthy super quick breakfast or snack

Sort of an answer... for holidays, I make a breakfast casserole in the crock pot, and in an effort to spend as little time in the kitchen as possible - esp. when the kids were littler - I scramble the eggs, dice the ham, mushrooms, etc, and then put in baggies the night before. In the morning I layer it in the crockpot and turn it on and it's always tasted the same as when I do it fresh. Could be because it's being further cooked, but as long as you're putting them with something else, I think it will be fine. Maybe add the eggs last if you're trying for speed and don't want the rubbery (i.e. heat for 50 seconds bun open, add eggs, close bun, 20 more seconds or whatever makes sense).
Sounds good!

edit: now seeing it's not open bun, so that part may not help. sorry!

I don't care for the texture after freezing and reheating. You can scramble them quickly in the microwave, it only takes a few seconds and will give you a better result.

No brainer. Why freeze them if we all do this. You said you have a microwave.

I think we all misunderstood, it sounds like the eggs are inside the buns? Baked in?

Yes, the eggs etc would be inside a baked yeast bun, like char siu bao or a runza. Guess I'll just try it. Been having a lot of fun with yeast bread lately. Looking to branch out.

They would have to be better than C Ration eggs. C Ration eggs just made you want to puke.
