High school writing taught me you lead with an attention grabber so...



That is me putting the finishing touch on what we call "cobbler". I know it is not really cobbler, but that's what we call it.

We have a heavy duty cast aluminum Bunt pan and a rack for the large dutch oven to keep the Bunt pan about 1/2" off the bottom.

I started with a regular yellow cake mix, 3 eggs, oil and water as per box. I mix this all with a mixer and then fold in a can of peach pie filling.

Once blended together, I poured it into the greased Bunt pan, and placed it into the dutch oven. Put coals on the top and under the oven, and baked for about 1 hour. It will take longer than called for on the box due to the added moisture from the pie filling. Just keep an eye on it and check with a knife (nothing sticking on it) when you get to about an hour.

When it was done thru, I removed it from the dutch oven and turned it over onto a plate. In the picture, I am grizzling "melted" about 1/2 jar of apricot jelly over the cobbler. (The other 1/2 of the apricot jelly was used for the glaze on the Cornish game hens I had done in the dutch oven earlier for dinner.)

Oh, that does look so good! Will have to try it. I do love apricot anything and they would go really good as an addition and glaze for a chocolate cake made this way.

Another one that I have gotten rave reviews on was a double dutch chocolate cake mix, cherry pie filling and hot fudge drizzled on top, with whipped cream.
