I have actually never heard of that happening. Our kids were in the cabover for 10 years, and we never had an issue.
How old are the kids? If they are small enough, they could sleep front to back instead of side to side, whoci would minimize thae likelihood...
Alaska is next! Still trying to fit the pontoons to the RV so We can get to Hawaii!

We used a shower-curtain sized rod (attach brackets to side walls of cabover) with a net that had about one-inch mesh. The bottom of the net was attached to the bunk floor under the mattress and we put a hem across the top to thread the rod through. Just lift rod out of brackets and lay it on mattress for access/egress.
This worked for us with two toddlers. If you have an escape-artist child, be sure that the rod latches into place.
Another method is to use portable bed guard rails. Walmart carries them.

We did the same - our girls slept front-to-back in our Triple E Regency until just this year when we traded the RV. Nobody fell out!

With our old (since sold) class-C, we used a 1960's version of This Bed Railing. It was nice for the peace of mind with very small children. It made for a safe place for the little one to play with older syblings during the day as well. It was great for those early developmental years.
Like this one, it too stored between the mattress and platform.
