Was there plenty of water in the toilet bowl and the other traps? Vent pipes clogged?

Likely the water traps that are in the bottom of the sinks and showers dried up. That would allow sewer gases to rise out of the tanks and into your unit. I put R/V antifreeze down each sink and shower and you might have to do that every couple of months during the storage times.

I also put about an inch into the toilet and leave it there. If it drains away then the gases from the tank can come back up.

I let the black tank get too full, or did not drain it fully, last week while camping, and we had an odor problem for about a half a day. Once I drained and flushed the tank well it cleared up. I think our regular household TP tends to gum up the works - I will start using a cheapie brand in the camper and see if this helps move things along when I pull that drain valve.

you don't say if you had drained the black tank or not prior to putting it in storage. If not, doing so will help significantly, especially if you are going to have it stored very long prior to the next trip.

here is my method and I have never had an odor, or as my wife says, an "Oh Dear!" problem:

Prior to finishing up the camping trip, top off the tank to at least 3/4 full and perferrably, full level. Go to the dump site or use your sewer hookup if you have one at the campsite. Completely drain your black tank. Shut the valve and put some more water in the black tank either through holding the flush valve on the toilet or using a black tank rinser if your tank is so equipped.
Open the valve again until drained and then close. Drain the gray tank to rinse the stinky hose of any particles left behind and empty the gray. Shut all valves.

Go back in the camper and put 3-4 gallons of water back in the black tank and sprinkle in a scoop or two of cheap laundry detergent and a cap full of calgone liquid water softener. drive home which mixes the above with the water and coats the tank. Leave this in the tank and store trailer. Keeps everything smelling fresh, nothing sticking to the tank and clean as a black tank can be for me. By leaving the above in the tank, it helps break down anything left behind and the trip to the next campsite, slooshes it around to coat the tank again, prior to being used.

Thats what works for me. You will find plenty that do not drain their tank after each trip that also have no problems. Your smell issue is likely because you have stuff left in your tank and your seals and traps are drying out due to long periods between uses. Using the fill the traps and toilet every month or so will likely eliminate this problem as will my solution which is dump the tank and rinse and put a little water/detergent and calgon in the tank for storage. My solution eliminates anything nasty to create the smell, the others keep it in the tank and prevent it from coming up the drain pipes and toilet to stink up the camper. Both will work.

The tank is going to smell but it should not enter the coach…

You have a vent or a seal problem…

The water in the toilet and traps form a odor seal, there is a seal at the base of the toilet, and there is most likely a vacuum breaker near the kitchen…

The stack vent for the bathroom might also be blocked by mud dabbers or not have been installed correctly…

You can cause the smell to enter if you run the exhaust vent and open the flush valve or the p-traps are dry…
