I want to thank everyone for all the great input. It looks like it's going to be a loooooong hunt for just the right rig. But I'm fairly patient (depends on who you ask). This is sorta fun.
I'm sure I'll have more questions as the quest progresses.

In 1988 we were looking for a mh to drive to Alaska and back. We shopped some, I was working a lot of overtime so it wasn't easy to shop.
We settled on a new 22' Mallard. After a couple of years we decided that we would like a little different floor plan.
We never really shopped for one, but kept our eyes open. There didn't seem to be one built liked we wanted.
In the summer of 2002 we saw an article on a new model that Winnebago had come out with. It was what we had been looking for, for about 12 years. It's an Itasca 24V. And we are still enjoying it.
I hope it doesn't take you that long to find what you want.

We looked for over a year before we bought Mobi. We were buying used and needed to look at lots of units, (MH, 5er, TT etc) before we decided a C was best for us.
Then we had to decide which layout would work best for us. With a boy and girl to accommodate who would not be getting any smaller nor would want to sleep in the same bed, the sleeping configuration was a priority. We found one C with North South Twin beds on the over cab, but it had been in a fairly serious accident.
Another priority was not having to make up the dinette or sofa daily.
We also had a 30 foot limit for parking at home.
We found a few C's with twin beds in back, bunks on one side at the back etc.
Mobi met all our needs. 27' twin beds with a solid door (not a curtain or accordion door). The kids each have their own bed. Room for all of us even now that the kids are adult sized and room for the dog too.

I have a Class C 6'2 224 overhead bed sleeps better than my high dollar bed at home.

Just thought I would add my perspective, I have a 2912 Coachmen Prisim, it has no overhead bed, but it has a large screen TV and storage where you would normally find the overhead bed. The other day I was in our local RV showroom, and they had another Prisim there. It had an overhead bed, no TV and No additional storage! I did not like it, and if this was the one in the showroom last November I would still be on the Class A forum!!!

It is getting more difficult to find a short Class C with the overhead bed because so many people seem to prefer the entertainment center option.
We love our short rig for just the reasons you listed, it can go almost anywhere in AZ except posted 4WD roads. We camp in some gorgeous places, close to trails and with few or no neighbors.
The bed is pretty long although we are only 6' and 5'7". We do not mind climbing up or being disturbed if one or the other has to use the facilities in the night. When camping we sleep very well after a day's hiking. We use a small plastic step on the dinette bench to get up and down from the bed.
There are storage cubbies in ours at the head and foot of the bed so you COULD put a longer piece of foam up there over the top of the mattress and make the bed even longer. Use CA King sheets and just tuck under at the sides?

We have a 2005 Itasca (by Winnebago) 24V with Ford's 5-speed computer controlled transmission mated to Ford's superb 2-valve V10 in the optional heavy duty E450 (ton and a half) chassis ... and love it! Winnebago quit making this Itasca model around 2005 and the Outlook version of it around 2006. They still offer a 24V (24 footer), but at just entry level quality - here's a link to their current 24V offering (Impluse 24V column only, the Impulse Silver is a quality upgrade but now only available in lengths longer than 24 feet):

DW uses the rear corner bed to spread out for her bad back. I'm 6'2", but only 215 lbs, and use the cabover bed with more than enough stretch-out room. I don't know what any cabover weight restrictions might be ... but it may be generous because Winnebago uses aluminum, not wood, internal framing in it's Class C walls.
We have a LOT of exterior storage because the Itasca 24V Class C was a basement model back then with taller exterior storage cabinets. Ours also has a crowned one-piece fiberglass roof, which I don't think the current 24V Impulse has. Note that currently (and back in 2005) the E450 heavy duty chassis was optional for the 24V model.
