Yes We purchased a cabinet at a local home center that matched the color, style and wood of our existing cabinets. I ran screws through the back into a wall stud and also through the bottom of the cabinet into the floor of the RV. We use this cabinet for canned goods.
We moved a recliner about a foot to make room for the cabinet.

We had GreatWest build us a cabinet to install in place of one seat. It matches the other furniture, and a double door, and has one side for hanging clothes or box items and the other with shelves. Also has a door opening near the bottom for misc. items. Still have 3 seats and can reinstall the 4th if we ever want too.

WE build a cabinet and match the color real close and put a countertop on it,and still have 3 seats. I never see a recliner in a class B roadtrek.

The downside of building your own cabinets is that we don't have access to the lightweight plywood Roadtrek and others use. It is probably only 60% the weight of regular plywood. Every extra pound you put into wood that you don't have to takes away a pound of hauling capacity.
There is a lightweight marine plywood made (Acuma, I think) that is supposed to be very nice, and super light and rot proof. I remember someone saying it is something like $100+ per sheet.

We removed the one seat that was behind the drivers seat. On the floor, however, is some hardware that was not removable.
In the space where the chair sat we placed a plastic tub that holds items and we also hang our shirts there. We also have a three shelf canvas unit that we use to hold our towels. Below that we have a slender plastic four drawer unit.
Marilyn w/ Joe, 2000 Xplorer Class B van, usually pulling a Ranger bass boat.
Smudge, (in photo) a Shih Tzu/Yorkie Mix and Gizmo is waiting at the Rainbow Bridge

You can use 2x2 framing and luan in place of the plywood.
