So it's that time of year where zucchini is in abundance. I thought I'd share with you my favorite zucchini bread recipe. Please feel welcome to share your favorite recipe for anything zucchini!

Zucchini Bread

3 eggs
1 cup of oil
2 cups grated zucchini
2 cups sugar
2 tsp. vanilla
3 cups flour
3 tsp. cinnamon (I use 3 Tbl. of cinnamon)
1 tsp salt
2 tsp. of baking soda (I use 1 tsp)
¼ tsp. baking powder
½ cups nuts

In a large bowl blend together the eggs, oil, grated zucchini, sugar and vanilla. Sift together the flour, cinnamon, salt, baking soda and baking powder and add to zucchini mixture and mix well. Stir in nuts. Pour batter into 2 well greased loaf pans or one bundt pan. Bake in a 350 pre-heated oven for 1 hour or until done.

Ahhhh! Zucchini time is here again! No matter what you do to it, how you cook it, what you add to it its still zucchini. Cant stand it personally myself. Wife loves it! My personal favourite is, if you add enough garlic to something, then eventually it will taste like garlic!

1/2 inch slices off a 12 inch zucchini or so. Pan fry one side, then flip. About 2/3 of the way through the other side drop on a piece of cheddar and let it just melt a bit. A little fresh basil on top.

Set alongside two eggs on toast for a yummy breakfast.

Eggs and Zuch

Saute 3 strips of bacon till crisp and crumble up

In clean fry pan, place slices of zuchinni and some water --- "steam" the zuch till it's tender.

Drain off any water that may be left in the pan and scoot the zuch to the side.

Melt a tsp or so of butter in the saucepan, pour in the eggs and add the bacon. Scramble together and cook until eggs are to your liking.

Serve!

I like it picked small, sliced diagonally, dipped in olive oil and oven roasted at 400 degrees. A little salt & pepper, too. They are amazingly sweet when roasted.
