We spent 3 nights and that was about right for us. If your not doing a big hike every day, 3 days is enough time to see a lot of stuff within driving distance, and have time to relax.

Somewhere I read that the average length of time spent at the South Rim is three hours! If you don't hike that's probably enough time to shoot off a roll of film and have lunch.
I like the North Rim also.
Check out the Grand Canyon Railroad for an added attraction.

We did 3 days. We hiked the South Rim trail from the campground to the hotels (really more of a walk than a hike). We saw the canyon in the early morning light when it is gorgeous and full of color. We went back to our campground and rode our bikes or relaxed when the rest of the tourists showed up in the afternoon. We then hit the stargazing night they had when we were there and also took in a sunset at Hopi point. 2 best times of the day to appreciate the canyon is the morning and the evening.

3 days is pretty good, enough to to see it all and enough time to relax and not be rushed.
