Broil some meat, add a salad and a vegetable.
Make a casserole and leave out the carbs in a Dutch oven.
Other great dishes in a Dutch would be beef stew or burgoo, spaghetti carbonara with a small amount of whole wheat pasta, stacked enchiladas, salmon ceasar salad,

I make a low carb version of a PF Chang lettuce wrap that my wife and I both love. It can be made with either ground chicken or ground turkey. I frequently make it ahead of time so it just needs to be warmed when camping.

The low carb tortillas are usually only 5 - 6 carbs, so, fajitas are a good one.

Kabobs on the grill.

Hot dog. Cooked on a stick over a fire. Eat off a plate with a fork.

When I fix tacos, I make mine a big taco salad, with a TBSP beans mixed in with the taco meat, and instead of taco shells, I just eat the salad with a few...that's 4 or 5 tortilla chips.
