Had crappie-hushpuppy-coleslaw-potato salad-baked beans-chocolate cake - ice cream and sweet tea. Local caught crappie and everything else was home made.

We had Spiedies. I made pork ones this time... I vacuum pack them and freeze them. If you are curious, here's a link and if you google, you'll find all kinds of recipes. Spiedies
Also good with salt potatoes

Sounds like kabobs we do lamb ,chicken and beef. Like these because when we grill them on skewers we also have onions, green pepper, mushrooms and any other veggie. We have plenty of the meat packets on hand when camping.

JoeH's location might say Apollo Beach, but the reference to Spiedies and Salt Potatoes are absolutely Central/Southern NY.
