I have a pair of Fantastic Fans. If I turn the fan speed knob to "0", it turns off not just the fan, but also keeps the cover from opening or closing if I flip that switch. They have a moisture sensor to close the vents in case of rain. My question is: if the fan speed knob is turned to "0", does it also disable the auto close function in case of rain?

Turning ther fan switch to 0 should just turn off the fan. It should not affect the thermostats or the rain sensor. Thats the way mine function anyway, or at least the way they used to function. One of mine has a mind of its own now so I just pulled the fuse out of it. We rarely ever use them anyway. Its either AC or furnace for us.
